Creamed Spinach

What You Need —
20 ounces fresh spinach
3 tablespoons butter
1/2 medium yellow onion, minced
2 cloves garlic, minced
1/2 cups milk
1/4 cups heavy cream
4 ounce cream cheese
Salt/pepper
Cayenne pepper
1/4 cup freshly grated Parmesan
For non dairy option: nutritional yeast, flour, non-dairy milk and butter
What You Do —
- Blanch spinach in salted water for about 30 seconds. 
- Immediately run under cold water to stop cooking process. Squeeze out any remaining water. 
- Sauté onion and garlic with butter until fragrant. 
- Melt cream cheese into milk and heavy cream. 
- Add in spinach and parmesan cheese. Season to taste with salt, pepper, and cayenne.
